Course Description

One old-fashioned kitchen skill that is making a strong comeback is homemade pickling and preserving. Modern pickling is going beyond canning summer veggies though. Chef Grant will show you how to make both classic recipes like dill pickles and homemade ketchup and then introduce you to his take on more modern preserves like Italian-style pickled vegetables and a wonderful strawberry balsamic jam. 

Learner Outcomes

Students will learn to interpret recipes and use standard kitchen tools and cooking techniques to produce home style dishes.
