Fortuna Arai is a local personal chef with over 20 years experience, who specializes in good cooking for clients who want to eat good, hearty and healthy food. 

Course Outline

If you or a friend have celiac issues, Thanksgiving dinner can be a real mine field for you. Pies, stuffing, even the gravy has flour in it. Well, Fortuna has spent a lot of time cooking for clients who eat a gluten-free diet and she has some great dishes that everyone can enjoy. For this class, we’ll make maple bacon roasted butternut squash with pecans, red curry mashed potatoes, gluten-free biscuits, and a cranberry-shallot relish.

Learner Outcomes

Students will learn to interpret recipes and use standard kitchen tools and cooking techniques to produce home style dishes.
