Course Description

Join us on a culinary journey that will introduce you to the exotic flavors of the Middle East. Each class will offer a complete menu with select dishes that are popular from Casablanca to Istanbul. Your teacher will be Chef Magdy Elzoheiry, a native of Alexandria, Egypt. An esteemed KCC culinary graduate, Chef Magdy has worked at several popular local restaurants, including Hajibaba and The Pyramids. Each class features a complete menu: appetizer, salad, entrée and dessert.

Course Outline

Most desserts from the Middle East tread the line between healthy (nuts, fruits, low fat) and decadent (lots of exotic spices and aromatic syrups), and they are such good eating. And Chef Magdy loves desserts, so he’s going to do a great job teaching you how to make some of his favorites. In this class, we’ll make an Egyptian classic, basbousa, a cake made from farina flour, topped with toasted almonds and soaked with syrup; Moroccan style baklava (mixed spices and nuts wrapped in crispy phyllo and dipped in syrup then sprinkled with sesame seeds); Tunisian style almond cookies; and finally, Chef Magdy will demonstrate atayaf, a Lebanese dessert made from small pancakes, stuffed with spices and nuts and dipped in honey. Learner Outcomes

Students will learn to interpret recipes and use standard kitchen tools and cooking techniques to produce home style dishes.
