Course Description

Interested in preparing great tasting healthy food and learning a little about nutrition at the same time? We’ve prepared a series of great classes with chefs that will expand your culinary repertoire and give insight into eating for wellness. As a personal chef for with over 25 years experience, Alyssa Moreau has made a reputation among her clientele for creating delicious vegetarian meals. As a food lover with a strong interest in healthy diets, Alyssa combines good flavor with good nutrition and practical tips for the home cook.

Course Outline

Holiday dinners and potlucks can be a real challenge for vegetarians and those who are trying to live a healthier lifestyle. Indulgence is the theme of the season. But now, thanks to Alyssa, you can indulge all you want in your own great holiday dishes. She’s put together a creative menu of delicious dishes for you to try. Alyssa will start with wild rice dumplings with a pumpkin sage coulis. We’ll be making roasted beets with mesclun green, tangerine vinaigrette and balsamic maple pecans. For the soup course, you’ll make asparagus bisque with a smoked olive oil drizzle. And Alyssa will do a demonstration of a wonderful sweet potato crème brulee

Learner Outcomes

Students will learn to interpret recipes and use standard kitchen tools and cooking techniques to produce home style dishes.
