Fortuna Cooley is a local personal chef with over 20 years' experience, who specializes in good cooking for clients who want to eat good, hearty, and healthy food. 

Course Outline

Indian food is a big favorite in Hawaii. And what's not to like? Delicious, spicy, versatile, it's one of the world's great cuisines. Fortuna has had lots of experience cooking Indian food for her clients. She's come up with a few recipes that you can make at home to make a tasty meal. For this class, you'll be making fresh paneer (fresh cheese) from scratch, then using it to make tawa paneer curry, learn to make onion pakora (spiced "tempura"-style), then we'll make a chicken kofta curry. And finally, Fortuna will show you how to use the whey water that comes from the paneer process to make a whey watermelon lemonade

Learner Outcomes

Students will learn to interpret recipes and use standard kitchen tools and cooking techniques to produce home style dishes.
