Course Description

Fortuna Cooley is a local personal chef with over 20 years’ experience, who specializes in good cooking for clients who want to eat good, hearty, and healthy comfort food. She spent years working at spas and restaurants in Arizona, Mexico, and California. Chef Fortuna’s love of cooking comes from her Italian grandmother, who taught her to serve food that makes people smile. 

Course Outline

When Thanksgiving comes around, if you're not the Turkey Master, then your job is to bring the best, most delicious, most talked about side dishes at your get together. Lucky for you, you've got Chef Fortuna to help you. She'll show you how to make wonderful dishes, like a roasted garlic and gouda gratin, a butternut squash mac and cheese (it counts as a vegetable), and coq au vin stuffed crimini mushrooms 

Learner Outcomes

Students will learn to interpret recipes and use standard kitchen tools and cooking techniques to produce home style healthy dishes.
