Course Description

We are happy to introduce Chef Salvo Coppola, a native son of Italy, and a classically trained chef who has worked in Italy, Germany, Austria, France and Monaco. He has lived in Naples, Milan, and Trieste, so he has an excellent knowledge of Italy’s regional cuisines. Furthermore, Chef Salvo worked for 24 years as the personal chef of H.R.H. Princess Caroline of Monaco. Chef Salvo will show you how to create authentic Italian, French and other European dishes that you can translate into your own home.

Course Outline

Chef Salvo has lived and traveled all over Italy, so he will be offering authentic regional menus of classic home-style dishes in a menu format. So, for our first trip, we’ll start with the island of Sicily. The antipasto (appetizer) will be that traditional Sicilian dip, caponate (made with eggplant, tomatoes, capers). Then for the primo (first course) you’ll learn to make ditalini rigati con acciughe e pomodori secchi (ditalini pasta with anchovies and sun-dried tomatoes). For the secondo (main course) Chef Salvo will show you how to make braciolette di pesce spade (rolled, stuffed, and braised swordfish steaks). And finally, for the contorno (side dish), we’ll make carciofi fritti con limone (fried artichokes with lemon). Sound delicious? You bet it is.

Learner Outcomes

Students will learn to interpret recipes and use standard kitchen tools and cooking techniques to produce home style healthy dishes.
