Course Description

Chef David Brown is the patisserie/confiserie chef instructor at KCC and formerly the executive pastry chef of the Waikoloa Hilton Hotel. Chef Brown has over thirty-five years of kitchen experience and won gold as a member of the U.S. Pastry Team at the Coupe du Monde competition in Paris in 1993.

 

Course Outline

To a native New Englander like Chef Brown, fall means apple season. Lots and lots of apples. Whatever you don't eat, gets turned into cider. Whatever doesn't get turned into cider, gets turned into a variety of wonderful fall desserts. Chef brown has created a menu of classic apple desserts from the U.S. and Europe for you. We'll be making his traditional New England-style apple pie, an authentic Austrian apple strudel. And speaking of "a la mode", we'll make fresh caramel ginger ice cream to serve on the side. 

Learner Outcomes

Students will learn to interpret recipes and use standard kitchen tools and baking techniques to produce home style baked goods.
