Course Description

Chef David Brown is the patisserie/confiserie chef instructor at KCC and formerly the executive pastry chef of the Waikoloa Hilton Hotel. Chef Brown has over thirty-five years of kitchen experience and won gold as a member of the U.S. Pastry Team at the Coupe du Monde competition in Paris in 1993. 

Course Outline

Chef Brown wants to have an old-fashioned cookie exchange for the holidays. For those of you who are unfamiliar with a cookie exchange, you bring a few dozen of your favorite cookies to a party and exchange with everyone else so you take home an extraordinary variety of unique cookies to share with your family. For this class, Chef Brown will have every student make decorate a different type of cookie, then at the end of class everyone shares the fruits of their festive labor. Bottom line: you go home with a heap of awesome cookies. Give it a try.

Learner Outcomes

Students will learn to interpret recipes and use standard kitchen tools and baking techniques to produce home style baked goods.
