Course Description

In the Eastern Mediterranean countries, mezze is the term for appetizer size dishes. From Greece to Lebanon to Egypt you’ll find mezze on the menu and entire restaurants that serve mezze, tapas style. Chef Magdy has put together a great menu of classic mezze that you’ll love. We’ll be making delicious falafel from scratch and a typical tahini sauce to go with them, authentic baba ganoush, a thick, garlicky fava bean dip called fool medammas, and something special from Lebanon, muhammara, a dip made with roasted red bell peppers, pomegranate molasses and walnuts. 

Learner Outcomes

Students will learn to interpret recipes and use standard kitchen tools and cooking techniques to produce home style dishes.
