Course Description

Love local products like CheeHoo or Noms? Are you curious about what it takes to develop a value-added product using locally-grown ingredients?

This immersive course is designed to provide you with the skills and insights needed to excel in the world of value-added product development.

Students will produce a variety of value-added food products from locally farmed, raised, cultivated, and sourced produce, meats, poultry, seafood, fish, etc. good enough to sell at your local farmers market or Foodland.

Some of the types of products that will be made:

  • Pickles
  • Sauces
  • Sausages
  • Baked goods (quick breads, cookies) 
  • Preserves, curds and jams

We will also work with 2-3 local farms to supply produce for the course. 

Learner Outcomes

Know basic food safety and sanitation principles.
Understand the basics of value-added products across categories.
Learn garde manger and baking techniques applicable to value-added production.
Understand farm-direct sourcing and supply chain.
