CULN3060 - Cooking with Chicken
Course Description
In this exciting course, Chef Grant Sato will teach you how to truss and roast 1 whole chicken, break it down, and make a pan gravy with the drippings. Chef Grant will also show you how to butcher a while raw chicken and prepare mushroom chicken utilizing the legs and thighs and chicken parmesan with the breasts.Learner Outcomes
By the end of this course the student will learn to:
- How to butcher a whole raw chicken
- How to truss and roast 1 whole chicken
- Break down the chicken
- Prepare a pan gravy with drippings
- Prepare a mushroom chicken using legs and thighs and chicken parmesan
Notes
Classroom Safety:
As a safety precaution, participants in all culinary classes are required to wear covered, non-slip shoes (e.g., athletic shoes) and comfortable long pants. Aprons or any other personal items may also be brought to class. The college will not be held responsible if such items are lost or stolen.
