Course Description

In this exciting course, Chef Grant will teach you how to fillet a whole fish, turn the head and bones into a hearty soup with vegetables, sauce 1 filet and present it with a quick pan sauce, create a mousseline from the scraps of the fish, to add to the second filet to turn into a poached roulade with a white wine butter sauce. 

Learner Outcomes

Students will be able to to prepare and demonstrate:

  • how to fillet a whole fish,
  • turn the head and bones into a hearty soup with vegetables,
  • saute 1 filet,
  • present it with a quick pan sauce, and
  • by creating a mousseline from the scraps of the fish, to add to the second filet to turn into a poached roulade with a white wine butter sauce. 

Notes

Classroom Safety:

As a safety precaution, participants in all culinary classes are required to wear covered, non-slip shoes (e.g., athletic shoes) and comfortable long pants. Aprons or any other personal items may also be brought to class. The college will not be held responsible if such items are lost or stolen.
