Course Description

In the years that we’ve offered Middle Eastern cuisine, the most popular dishes have come from Morocco. Perhaps it’s the blend of Middle Eastern spices with a French influence. Perhaps it’s the wonderful variety of ingredients Morocco has, from mountain lamb to fresh fish and vegetables. Moroccan food is a feast for all the senses. So Chef Magdy has created a full Moroccan meal for you to enjoy. He’ll show you how to make an appetizer of chicken b’stilla, a sort of exotically spiced chicken pot pie, and as the entrée, a traditional (braised) chicken tagine with apricots. We’ll also make a simple and tangy carrot salad. Finally, for dessert, Chef Magdy will show you how to a quick and luscious rose-scented rice pudding. 

Learner Outcomes

Students will learn to interpret recipes and use standard kitchen tools and cooking techniques to produce home style dishes.
