Course Description

Chef David Brown is the patisserie/confiserie chef instructor at KCC and formerly the executive pastry chef of the Waikoloa Hilton Hotel. Chef Brown has over thirty-five years of kitchen experience and won gold as a member of the U.S. Pastry Team at the Coupe du Monde in Paris in 1993. 

Course Outline

Nothing says lovin' like...fresh baked bread. There's just something about the smell of baking bread, the feel of the warm loaf and the taste of something homemade that makes you smile every time. There seem to be a lot of bakers in Hawaii, so to satisfy your requests of homestyle breads, Chef Brown will teach you how to make a wonderful multi-grain bread, a "butter crusted" loaf, and a classic herbed dinner roll that you can prepare for any family meal. 

Learner Outcomes

Students will learn to interpret recipes and use standard kitchen tools and cooking techniques to produce home style dishes.
