Course Description

Interested in preparing great tasting healthy food and learning a little about nutrition at the same time? We’ve prepared a series of great classes with chefs that will expand your culinary repertoire and give insight into eating for wellness.

As a personal chef for with over 25 years experience, Alyssa Moreau has made a reputation among her clientele for creating delicious vegetarian meals. As a food lover with a strong interest in healthy diets, Alyssa combines good flavor with good nutrition and practical tips for the home cook.

Course Outline

Whole grains are good for you! But what does whole grain mean? And how do you cook them so they make good eating? Eating whole grain used to mean including brown rice in your meals. But now more than ever there are lots of options available in the grocery store that are really nutritious, have a nice flavor and are so versatile. For this class, Alyssa will teach you how to make black rice with spicy tofu, Asian greens and…coconut “bacon”; roasted kabocha with farro, fresh greens and honey/calamansi vinaigrette; and garlicky kamut with artichoke, spinach, and a dill lemon dressing. Come try something different. 

Learner Outcomes

Students will learn to interpret recipes and use standard kitchen tools and cooking techniques to produce home style healthy dishes.
