Course Description

Fortuna Cooley is a local personal chef with over 20 years’ experience, who specializes in good cooking for clients who want to eat good, hearty, and healthy comfort food. She spent years working at spas and restaurants in Arizona, Mexico, and California. Chef Fortuna’s love of cooking comes from her Italian grandmother, who taught her to serve food that makes people smile. 

Course Outline

As we get into the fall season , and the weather cools (relatively speaking), and the holidays start to pop up, everyone wants to eat warm, rich, lush food. So with all of these things in mind, Chef Fortuna designed a menu to make everyone happy. We'll be making pork tenderloin with a bourbon walnut glaze, a layered sweet potato, turkey, and cauliflower casserole with bacon (perfect for winning the potluck competition), and for dessert, a black sesame pumpkin mochi cake

Learner Outcomes

Students will learn to interpret recipes and use standard kitchen tools and cooking techniques to produce home style healthy dishes.
