Course Description

Interested in preparing great tasting healthy food and learning a little about nutrition at the same time? We've prepared a series of great classes with chefs that will expand your culinary repertoire and give insight into eating for wellness. 

As a personal chef for with over 25 years experience, Alyssa Moreau has made a reputation among her clientele for creating delicious vegetarian meals. As a food lover with a strong interest in healthy diets, Alyssa combines good flavor with good nutrition and practical tips for the home cook. 

Course Outline

Vegetarian or not, home lunch needs lots of help. It's so easy to get into a routine-which can be the death of healthy eating. Your taste buds get bored, lunch isn't satisfying, and then you walk past the candy machine...Alyssa is here to help! She has spent years making lunches for her clients and has selected some simple and tasty lunch recipes that you can mix into your repertoire. We'll be making a chickpea "mock tuna" salad sandwich, an eggless "egg" salad (tofu) sandwich, a soba noodle stir-fried bento with creamy cashew sauce and cucumber ume pickle, finally, a versatile tahini-carrot-olive spread that goes good on everything. 

Learner Outcomes

Students will learn to interpret recipes and use standard kitchen tools and cooking techniques to produce home style dishes.
