Course Description

 Join us on a culinary journey that will introduce you to the exotic flavors of the Middle East. Each class will offer select dishes that are popular from Casablanca to Esfahan. Your teacher will be Chef Magdy Elzoheiry, a native of Alexandria, Egypt. An esteemed KCC culinary graduate, Chef Magdy has worked at several popular local restaurants, including Hajibaba and The Pyramids. 

Course Outline

If you want to eat food with bold, bright flavors, that's healthy, and simple to make, Middle Eastern food is the way to go. This spring, Chef Magdy will be teaching classes on how to make great entrees from Morocco, Tunisia and Iran. We'll start with a Moroccan chicken tagine (stew) with preserved lemon and green olives. Then, we'll make an Tunisian dish of chicken with figs, mint, and walnuts. Finally, we'll make a classic Persian recipe called koresh fesenjan (braised chicken with pomegranate molasses and walnuts). It's fantastic. 

Learner Outcomes

Students will learn to interpret recipes and use standard kitchen tools and cooking techniques to produce home style dishes.
