Course Description

Interested in preparing great tasting healthy food and learning a little about nutrition at the same time? We've prepared a series of great classes with chefs that will expand your culinary repertoire and give insight into eating for wellness. 

As a personal chef for with over 25 years experience, Alyssa Moreau has made a reputation among her clientele for creating delicious vegetarian meals. As a food lover with a strong interest in healthy diets, Alyssa combines good flavor with good nutrition and practical tips for the home cook. 

Course Outline

Whether you're vegetarian, vegan, an active athlete, or an active eater looking to mix things up a little, getting your daily allowance of clean protein can be a challenge. Tofu is bland (and fatty); beans are great, but can have "side effects"; and grain-based proteins can bring more carbs than protein. Not to mention, flavor is key. Alyssa has some really creative and delicious ways to mix healthy proteins into your daily diet. You will learn how to make a kim chee black rice and edamame main course salad; a sweet potato black bean and tatsoi crunch bowl (with sriracha smoked almonds and a maple citrus vinaigrette); and fajitas with a lime aioli. 

Learner Outcomes

Students will learn to interpret recipes and use standard kitchen tools and cooking techniques to produce home style dishes.
