Course Description

Your instructors will be Juli Burden and Patrick Oiye, of Birdhouse Coffee Co.

Julie has spent the last 12 years working in the specialty coffee industry. She started as an apprentice roaster at Sweetwater Organic Coffee Company in Gainesville, Florida. In addition to training as a barista and managing a coffee shop, she took her Q-grader exam and got certified by the Coffer Quality Institute in Long Beach, California. Three years ago she moved to Hawaii to study Agronomy at UH Manoa in hopes to learn about farming coffee sustainability.

Patrick began his career in the specialty coffee industry as a barista eight years ago in Seattle. He moved to Honolulu three years ago and continued his profession in the coffee industry as a lead barista and trainer. Patrick has extensive experience working for new small businesses and works hard for the communities they serve. Currently, he is working with coffee farms here on Oahu and is a cafe consultant and barista trainer.

Course Outline

Coffee is a 600 year old drink. That's what you call "old school". Bus over the past 1400 years, it has gone from a farmer's drink to a precious luxury item, to a blue collar beverage, and in the past 20 years coffee has been transforming into something of an art form in the best cafes around the world. We've reached the point where serious coffee drinkers buy beans from tiny organic farms, roast them to perfect temperatures, then use scientifically designed devices to elicit the subtlest notes from each ounce.

But what about you, the average person? Are you bewildered by the variety of coffees available? Not sure how to find the beans that will make you say, wow? Well this class is for you! Juli and Patrick are seriously passionate evangelists for the quality coffee experience. They'll teach you the history, the regions, the flavors, the production, and how to squeeze out the best flavor from your cup. We will hold three sessions. Each session will consist of lecture, demonstrations and tasting of the finest coffees from Hawaii and around the world.

Learner Outcomes

Students will learn the history, production, geography, and creation of coffee beverages.
