Course Description

The weather is getting warmer and the time is right for frozen desserts. From luscious ice cream to refreshing sorbets, frozen treats make everyone smile. This spring, Chef Brown will teach you how to make a decadent mocha mac nut mud pie, classic Tahitian vanilla ice cream, and Chef Brown’s special sour cream strawberry ice cream that’s just in time for strawberry season. And yes, if you wish to make them at home, you’ll need to buy an ice cream maker. Oh, and FYI, you MUST BRING A COOLER TO CLASS. Or you can enjoy your milkshakes on the way home.

Learner Outcomes

Students will learn to interpret recipes and use standard kitchen tools and cooking techniques to produce home style desserts.

Chef David Brown is the patisserie/confiserie chef instructor at KCC and formerly the executive pastry chef of the Waikoloa Hilton Hotel. Chef Brown has over thirty-five years of kitchen experience and won gold as a member of the U.S. Pastry Team at the Coupe du Monde competition in Paris in 1993.
