Course Description

Join us on a culinary journey that will introduce you to the exotic flavors of the Middle East. Each class will offer select dishes that are popular from Casablanca to Esfahan. Your teacher will be Chef Magdy Elzoheiry, a native of Alexandria, Egypt. An esteemed KCC culinary graduate, Chef Magdy has worked at several popular local restaurants, including Hajibaba and The Pyramids. 

Course Outline

Food all across the Middle Eastern cultures is all about complex flavors developed from the mix of spices and the balance of sweet and savory that goes into almost all of their dishes. The food is so enjoyable to eat you’ll never realize that you’re actually eat really healthily! Chef Magdy will show you how to make a great meal that will make your palate so happy. We’ll start with an appetizer of chermoula eggplant with bulgur wheat and yogurt. Chermoula is a tangy sauce made with lemon juice, paprika, garlic, olive oil and other wonderful things. For the side dish, Chef Magdy will show you how to make mejadra, a dish composed of spiced lentils, rice, and rich caramelized onions. And for your entrée, you’ll make an incredible dish of roasted chicken with tangerines, spices and herbs

Learner Outcomes

Students will learn to interpret recipes and use standard kitchen tools and cooking techniques to produce home style Middle Eastern dishes.
