Course Description

Interested in preparing great tasting healthy food and learning a little about nutrition at the same time? We've prepared a series of great classes with chefs that will expand your culinary repertoire and give insight into eating for wellness. 

As a personal chef with over 25 years experience, Alyssa Moreau has made a reputation among her clientele for creating delicious vegetarian meals. As a food lover with a strong interest in healthy diets, Alyssa combines good flavor with good nutrition and practical tips for the home cook. 

Course Outline

It might be fall, but it doesn’t feel like it – and when it’s warm out sometimes all you want to eat is a big salad. And not just a bunch of chopped iceberg lettuce drowned in bottled dressing, we’re talking a big, hearty, tasty salad packed with good things. Alyssa will teach you how to make a crunchy Thai salad with marinated tofu and a chili lime dressing served over a bed of rice noodles; a black rice “burrito” bowl topped with sweet and spicy pickled onions; a vegetarian version of an Indonesian gado gado salad served with a spicy peanut sauce; and to finish off the menu, Alyssa’s version of Laotian laap made with roasted cauliflower. Now that’s good eating!

Learner Outcomes

Students will learn to interpret recipes and use standard kitchen tools and cooking techniques to produce home style healthy dishes.
