Course Description

Chef Grant continues with his popular cooking fundamentals series. Every class begins with a lecture, followed by a cooking demonstration and then hands-on cooking! Chef Sato enjoys preparing simple, flavorful food utilizing locally grown products with an emphasis on Asian/Pacific flavor, local tastes and classic techniques.

Course Outline

If you're not familiar with izakayas, they are essentially Japanese pubs that sell beer, sake, and a nice variety of casual dishes. Chef Grant has been traveling regularly to Japan this year, and he's really been inspired to create a fun and tasty izakaya-style menu for you. For this class, you'll learn how to make kabocha and bean shirae (kabocha pumpkin and bean salad with sesame tofu dressing), gyoza (skillet dumplings) two ways, and korokke (creamy croquettes)

Learner Outcomes

Students will learn to interpret recipes and use standard kitchen tools and cooking techniques to produce home style healthy dishes.
