Course Description

‘Tis almost the season for holiday gifts. And what makes people happier than gifts they can eat? Chef Brown has looked in his bag of goodies and pulled out some wonderful, classic European holiday breads for you to make and share. From Denmark, comes a delightful circular sweet bread called a kringle, that’s filled with sweet fruit. And from Tuscany, comes their version of fruit cake, called panforte, make with nuts, spices, dried fruit and honey. And from, let’s say…Germany…a wonderful braided coffee cake, hold the coffee. 

Learner Outcomes

Students will learn to interpret recipes and use standard kitchen tools and baking techniques to produce home style baked goods.

Chef David Brown is the patisserie/confiserie chef instructor at KCC and formerly the executive pastry chef of the Waikoloa Hilton Hotel. Chef Brown has over thirty-five years of kitchen experience and won gold as a member of the U.S. Pastry Team at the Coupe du Monde competition in Paris in 1993.
