Course Description

KCC pastry arts instructor Chef Dan Wetter is back in the continuing education line up! Chef Wetter is a baking instructor par excellence. His recipes are wonderful and he’s a terrific teacher as well. We’re very lucky to have him. You’ll see that we’ve opened up two sessions of each class, so you all have a chance to learn from one of Hawaii’s best. 

Course Outline

Many of you have asked for artisan breads. As you might know, the first step in any good artisan bread is making the pre-ferment, the mixture of flour, water, and yeast that will be the kick starter to give your dough its shape and flavor. For this class, Chef Wetter will bring in a sourdough starter to save time and you'll learn the whys and hows to develop shape, and cake top-notch artisan breads. This is a two-day class! 

Learner Outcomes

Students will learn to interpret recipes and use standard kitchen tools and baking techniques to produce home style baked goods.
