Course Description

The knife is the most fundamental tool of the kitchen. For culinary professionals, it is essential that they understand all of the classic cuts and techniques and how they may be applied in the workplace. In this class you will learn how to produce all of the proper cuts and apply them in a practical manner. Students will also learn proper knife sharpening techniques and maintenance. 

You will begin with a lecture on the terminology used to describe every type of knife used in the modern professional kitchen. Then you will move into the kitchen and watch chef demonstrate the classic techniques to cut fruits and vegetables, followed by a demonstration of practical cuts. All students will then practice cutting fruits and vegetables under instructor guidance.
