Course Description

Chef Grant continues with his popular cooking fundamentals series. Every class begins with a lecture, followed by a cooking demonstration and then hands-on cooking! Chef Sato enjoys preparing simple, flavorful food utilizing locally grown products with an emphasis on Asian/Pacific flavor, local tastes and classic techniques.

Course Outline

Chef Grant has taught almost every subject in the culinary program at KCC. Most recently, he has been teaching garde manger, which is traditionally the dishes of the cold kitchen, including appetizers, hors d’oeuvres, canapes, etc. Chef Grant will teach you how to make light and elegant salmon-stuffed dill puffs, roast beef canapes with Dijon butter and cornichon, and lovely mini lilikoi tartelettes for your own buffet.

Learner Outcomes

Students will learn to interpret recipes and use standard kitchen tools and cooking techniques to produce home style healthy dishes.
