Course Description

Interested in preparing great tasting healthy food and learning a little about nutrition at the same time? We've prepared a series of great classes with chefs that will expand your culinary repertoire and give insight into eating for wellness. 

As a personal chef for with over 25 years experience, Alyssa Moreau has made a reputation among her clientele for creating delicious vegetarian meals. As a food lover with a strong interest in healthy diets, Alyssa combines good flavor with good nutrition and practical tips for the home cook. 

Course Outline

Ever go to the farmers' market and see all of those beautiful greens and think to yourself, "now what the heck do I do with those?" Well, Alyssa is here to help you out. Leafy greens grow really well here in Hawaii and farmers' markets are loaded with kale, chard, beet greens and lots more. And greens have tons of nutrition; they're packed with calcium and iron, vitamins A, C, and K, antioxidants, and lots of fiber. You can just sauté them or, to really make them sing, get creative. Alyssa will teach you how to make hearty chard rolls (stuffed with barley, mushrooms, white beans) and covered with chickpea flour gravy; cooked beet greens (save those tops!) with roasted beets, saffron quinoa, and crispy shallots, and carrot top pesto sauce. Alyssa will also make a great green juice drink to share with everyone! 

Learner Outcomes

Students will learn to interpret recipes and use standard kitchen tools and cooking techniques to produce home style healthy dishes.
