Course Description

Do you need gifts in hand to show your love on Valentine's Day? Of course not, but then again- chocolate. Come on. How can you not put a smile on your loved one's face with a heap of beautiful and delicious handmade chocolates? Oh, and for the non-chocolate lovers, there will be macarons. Yes, real French macarons. In this class, Chef Brown will teach you how to make hand-rolled chocolate truffles and two types of elegant molded chocolates with flavored ganache fillings. And you will also make classic French macarons and elegant almond financiers. Spread the love. 

Learner Outcomes

Students will learn to interpret recipes and use standard kitchen tools and baking techniques to produce home style baked goods.

Chef David Brown is the patisserie/confiserie chef instructor at KCC and formerly the executive pastry chef of the Waikoloa Hilton Hotel. Chef Brown has over thirty-five years of kitchen experience and won gold as a member of the U.S. Pastry Team at the Coupe du Monde competition in Paris in 1993.
