Course Description

Tired of baloney sandwiches, pb&j, instant ramen, and fast food? Want a lunch that will make your taste buds sing, and your co-workers green with envy? Well, Chef Fortuna has a few awesome recipes that require just a little effort, but pay off big time in deliciousness. You’ll want to make them again and again. We’ll start with boldly flavored,  hearty, and healthy steak sandwich with red onion jam; a twist on the old tuna sandwich—the French Niçoise sandwich; and finally, something for adults and kids alike, Southwest crispy chicken sliders with tangy mustard seed slaw. If your co-workers bug you, tell them you can make extra…for a fee.

Learner Outcomes

Students will learn to interpret recipes and use standard kitchen tools and cooking techniques to produce home style healthy dishes.

Fortuna Cooley is a local personal chef with over 20 years’ experience, who specializes in good cooking for clients who want to eat good, hearty, and healthy comfort food. She spent years working at spas and restaurants in Arizona, Mexico, and California. Chef Fortuna’s love of cooking comes from her Italian grandmother, who taught her to serve food that makes people smile.
