Course Description

Farmers markets are popping up all over the state and that’s a good thing. Every chef will tell you start your dishes with the best quality ingredients and you can’t get better, riper, and with more flavor, than something from just a few miles away. But what can you do with nature’s bounty? Papayas are easy, green beans, a little more challenging. We’ll start with the vegetable you see everywhere and make a tandoori style zucchini, we’ll make Okinawan sweet potato salad; charred coconut green beans; tomato, basil and corn salad, and Alyssa will demonstrate how to make your own pickled ginger! 

Learner Outcomes

Students will learn to interpret recipes and use standard kitchen tools and cooking techniques to produce home style healthy dishes.
