Course Description

If you take this class, you may want to buy a pair of pants with a drawstring. The menu is a doozy. It’s right there in the title: three cheesecakes. The ultimate combination of fat and sugar. And what’s wrong with that? Chef Brown will teach you how to make cheesecakes from around the world. We’ll be making the classic New York style cheesecake, so rich and dense they’re almost bulletproof. On the other side of the scale is the Japanese style “cotton” cheesecake. And finally, from southern Italy, the Italian ricotta cheesecake. There’s a little something for everyone…if you’re willing to share.

Learner Outcomes

Students will learn to interpret recipes and use standard kitchen tools and baking techniques to produce home style dishes.

Chef David Brown is the patisserie/confiserie chef instructor at KCC and formerly the executive pastry chef of the Waikoloa Hilton Hotel. Chef Brown has over thirty-five years of kitchen experience and won gold as a member of the U.S. Pastry Team at the Coupe du Monde competition in Paris in 1993.
