Course Description

Believe it or not, Hawaii and Italy have something deeply in common: rice. Americans imagine that Italians eat only pasta three times a day, but, depending on the region, rice can be the most common every day starch. In Italy, though, they tend to spruce up their rice recipes with lots of creative ways. Chef Salvo will teach you classic ways the Italians love to eat their rice, starting with that Lombardian classic: risotto allo zafferano (risotto with saffron), then the Sicilian timballo di riso (stuffed and molded baked rice), rice balls in soup, and finally, for dessert torta di riso alla Carrarina (sweet baked rice custard). 

Learner Outcomes

Students will learn to interpret recipes and use standard kitchen tools and cooking techniques to produce home style healthy dishes. 

Notes

We are happy to have Chef Salvo Coppola, a native son of Italy, and a classically trained chef who has worked in Italy, Germany, Austria, France and Monaco. He has lived in Naples, Milan, and Trieste, so he has an excellent knowledge of Italy’s regional cuisines. Furthermore, Chef Salvo worked for 24 years as the personal chef of H.R.H. Princess Caroline of Monaco. Chef Salvo will show you how to create authentic Italian, French and other European dishes that you can translate into your own home.
