Course Description

If you have been to Texas, read about Texas, or met any Texans, you might know that in the debate of cake vs pie, pie wins in Texas – always. Join this fun class to learn the basics of flaky pie pastry and how to make four classic Texas pies of various shapes and sizes. Texas pecans are perfect for slab pie, a great form when you need to feed a crowd. If you haven’t had chess pie, you need to learn about this quintessential Southern pie in one of its classic preparations, buttermilk chess pie. Then, learn how to make a chocolate cream pie that every adult in Texas swears her grandmother’s is the best. Finally, explore fruit hand pies – whether going out on the range or to the football tailgate party, hand pies are the portable, less messy pie of the day.

Learner Outcomes

Students will learn to interpret recipes and use standard kitchen tools and cooking techniques to produce home style healthy dishes. 
 

Notes

Heatherly Bucher is a veteran bread baker and recipe developer whose journey began with the gift of an electric bread machine 28 years ago. Now, she explores all things yeast, wild and cultured; hand shaped; wood fired, gas, or electric. She currently oversees the bread program and training at a non-profit social enterprise culinary program, YangonBakehouse (www.yangonbakehouse.com) in Yangon (formerly Rangoon), Myanmar (formerly Burma). Heatherly connects with bakers and chefs around the world on topics of pursuing high nutrition foods for everyone, reducing food wastage, and social enterprise as a change agent. Raised as a global nomad (military brat raising military brats), Heatherly has seen food's power to bridge gaps and bring connection and she loves to explore food's ever changing adaptions to what is local.
