Course Description

It’s summer time and in Italy that means outdoor lunches with good wine and good company. Chef Salvo has picked a few of his go-to dishes for a nice meal he might eat while on vacation at the Roman coast. We’ll start with a fresh zucchini salad with warm octopus, a pork saltimbocca as the entrée, and roasted tomatoes “alla Romana” with fresh herbed green beans as the contorno, or side dish. Perfect for summer.

Learner Outcomes

Students will learn to interpret recipes and use standard kitchen tools and cooking techniques to produce home style healthy dishes.
