Course Description

Nowrooz is the Persian New Year celebration, held at the very beginning of spring. It dates back 3000 years and is a celebration of life and new beginnings. For thirteen days, families celebrate by, well, a lot of eating. Traditionally, fish and herbs are served; symbolizing life, and then Persians add their magic spice blends and deliciousness is achieved. Amin will start you off with a special herbed rice dish called sabzi polo, flavored with fresh spring herbs. Then we’ll make a pan-fried fish dish tossed with spices called…mahi (that’s the Persian word for fish, not Hawaiian) to be served with the rice. And finally we’ll make kuku sabzi, a kind of large egg white frittata filled with a ton of fresh chopped herbs.

Learner Outcomes

Students will learn to interpret recipes and use standard kitchen tools and cooking techniques to produce home style healthy dishes.
