Course Description

Summer is the best time for big salads! It’s hot, so you don’t really want to turn on the stove and all of the best fruits and vegetables are in season. A simple green salad can be refreshing, but when you want a real meal, Alyssa’s got the recipes for you! For this class, she will teach you how to make an asparagus, beet, and goat cheese (with a “mock cheese” demonstration) salad with pine nuts on mesclun greens with a Dijon fig balsamic vinaigrette; a crunchy taco salad (filled with seasoned cauliflower and walnuts) with a cilantro lime dressing; and a farmers market fresh corn salad.

Learner Outcomes

Students will learn to interpret recipes and use standard kitchen tools and cooking techniques to produce home style healthy dishes.
