E hui pu kakou! Let’s celebrate and malama Hawai‘i through cooking. Discover how malama honua relates to food and Hawai‘i’s people as you experience “working in the kitchen” at the Culinary Institute of the Pacific at Diamond Head. While working in pairs preparing and cooking, this workshop encourages one to be “pono”, while learning about Hawai‘i’s history, culture, and language.

Course Outline

"Mixed plate" themes will include courses for the following targeted audiences:

  • Kaiaulu (Community, all ages)
  • Makua (Adults, life partners)
  • Ola kino (Young adults, college students)
  • ‘Ohana (Parents and children ages 8-16 years)

Learner Outcomes

By the end of the program, participants will:

  • Practice basic cooking skills & knowledge
  • Practice basic kitchen strategies
  • Gain awareness of the significance and meaning of Malama Hawai‘i

Dress code:  As a safety precaution, participants in all culinary classes are encouraged to wear covered, non-slip shoes (e.g. tennis shoes) and comfortable long pants.  Aprons or any other personal items may also be brought to class.  The college, however, will not be held responsible, if such items are lost or stolen.

Kapi‘olani Community College Refund/Drop Policy:

100% refund: Notification to Non-Credit Registration made 10 business days or more prior to start date of course.

Recommendations

This course is a result of collaborating with the Culinary Arts & Hawaiian Studies programs under the “Ho‘olaule‘a” program umbrella. Hawai‘i is a gathering place where food, entertainment and hospitality are shared and this course introduces participants to celebrating Hawaiian style, or Ho‘olaule‘a. During this program series, participants will learn the history of Hawai‘i, gain further respect for the land and cultural practices, and appreciate more community engagement through “celebration”. Participants will learn the basics of menu planning, food preparation, kitchen safety and sanitation, cooking skills and so much more. The assessment will include participants planning, organizing and executing a celebration, Hawaiian style.
