Course Description

Kapi`olani Community College will provide a unique two-day Culinary Arts program for Yokosuka College Culinary and Pastry Art.  The students will learn traditional food and lifestyle of the Hawaiian people.  Students will also interact with Kapi`olani Community College Culinary students by demonstrating Japanese food and decorative knife skills in traditional Japanese cuisine.  This cultural and hands-on workshop will help Yokosuka students extend their horizons and prepare themselves to work as a chef with international perspectives.

Student Learning Outcomes:

By the end of the program, the students will be able to:

  1. Define the characteristics of food material and Pacific Rim cuisine
  2. Prepare one item from the Pacific Rim cuisine
  3. Compare traditional food preparation in Hawai`i and that of Japan

Course Outline

Course Content & Activities:

  1. Ho`okipa Me Ke Aloha workshop
  2. Interaction with KCC Culinary students, presentation and demonstration on Japanese cuisine
  3. Field work at Farmer's market
  4. Cooking Hands-on Training
