Course Description

Meat cutting/butchery is one of the oldest professions known to man because it is a useful, marketable skill. Technology and industry continue to change, so knowledge and techniques need to keep pace. This Meat Processing program is designed to educate potential and current meat cutters on the meats industry. Learn a new skill to make you more employable or enroll to keep your skills up to date!

Students will learn about the meats and livestock industries and the science behind meat color, tenderness and flavor, along with gaining valuable hands-on experience cutting and processing meats.


Skills include:
• hand tool usage
• butchery equipment usage
• knife sharpening
• meat wrapping
• scale operation
• sanitation routines

Prerequisites

Students must submit TB clearance to EDvance office prior to starting course.  TB clearance may be issued by your health care provider, or from the State of Hawaii Public Health Nurse's Office.  For more informaiton, visit http://health.hawaii.gov/tb/.
